enthusiasts.
Craft Beer is an American
term generally referring to all-malt beer that is brewed with an eye
to beer style rather than mass appeal. It has gradually replaced the
term microbrew as the most current term to describe the output of
micro or craft breweries. Craft beer is made using a traditional
process of blending the sugars from malted grains, such as barley or
wheat, with hop flowers and water. The skill of the Masterbrewer
brings out the desired aroma, color, mouth feel, foam and flavor
qualities of the hops, and malt. After careful aging at just the right
temperatures the beer is packaged and delivered to the consumer. As
microbrews proliferated, some became more than microbrews broadening
the category definition to Craft beer - high quality, generally
all-malt, beer. A craft brewery is a modern brewery which produces a
limited amount of beer, usually not more than 2 million barrels.
The
interest in beer styles in the U.S. has increased steadily since the
enactment of laws clarifying the legality of home brewing in 1979.
This movement encouraged an increase in hobbyists who contributed
greatly to the trend. Pioneer breweries such as the reinvigorated
Anchor Brewing and newcomers Samuel Adams and Sierra Nevada, brought
the concept of craft beer to a wider audience and provided the
foundation upon which today's market is based.
Ale
Essentially this style of beer is brewed using top fermenting yeasts,
capable of fermenting in little time at higher temperatures. During
the process most yeasts will produce flavors and aromas that lend a
unique stamp to the beer. These aromas tend towards fruitiness but may
also be spicy and complex. Most ales contain hops, which imparts a
bitter, herbal flavor that balances the malt sweetness.

Lager
Lager is distinguished from ale by its yeast. Lager yeasts ferment at
colder temperatures and collect on the bottom of the fermenting
vessel, while ale yeasts ferment at warmer temperatures and settle on
the top of fermentation tanks. Once fermentation is complete lagers
need to age for weeks, even months. Lagers have clean straight forward
flavors of malt and hops. Lager yeasts are content to stand aside and
allow the other ingredients to be appreciated.
